Dinky Recipe – Sunday Soup… Caramelized Cauliflower


I have started a bit of a routine now on a Sunday which involves a batch of soup for the week. This week’s soup comes from The Frugal Cook by Fiona Beckett (whose blog is well worth a read).

  • Medium to large cauliflower (cut into florets)
  • 75g unsalted butter
  • 1/4 tsp curry powder (I upped this to 1 tsp as i LOVE curry powder)
  • 150ml semi skimmed milk
  • 600ml vegetable stock
  • salt, pepper and lemon juice to taste


  1. Melt the butter in a large-ish pan
  2. Add the cauliflower and stir to coat, cook for 12-15 minutes, stirring and browning
  3. Add the curry powder and stir in – then cook for another 3 minutes
  4. Pour in the milk and bring to the boil, then simmer for 5 minutes
  5. Add 1/2 the stock and boil until the cauliflower softens a little
  6. Allow to cool slightly and then puree with hand blender or in a blender
  7. Once smooth – add the rest of the stock and stir through
  8. Season to taste
